“When we cut that ribbon, that dream came true. A burst of emotion right there,” Jose Luis Rodriguez said of the opening of Mixtitos Kitchen.

DALLAS – I asked Jose Luis Rodriguez if it was too much of a stretch, over the very top, to call his current state the real “American Dream.” But he says his life is exactly that right now, with Mexican flavors, a heavy dose of Japanese cuisine, and a huge dose of French-inspired béchamel sauce.

However, several months ago, his first dream was not coming true at all. He tried one of those “ghost kitchens” where you rent a kitchen space and simply fill online and take-out orders.

“It’s faith that drives me forward,” he told me then.

But he believed and dreamed that he would someday have an entire restaurant of his own.

He came to America from Mexico 22 years ago and settled in Dallas.

“Just get a better life. Get educated,” he said.

And spent all those years as a waiter, as a server, working for other people. His real dream was to become a chef and owner of his own restaurant.

Well, just last month the doors opened Mixtitos Kitchen At the corner of Grand and Samuel in East Dallas. This is where you can find Jose Luis behind the bar, directing a staff of chefs and chefs to the kitchen, and making frequent rounds into the dining room welcoming customers.

He joked with one of his first customers, “You don’t have to cook anymore. Let us do it for you.” “Great to have you guys here. Absolutely any time.”

“I always kept to myself and had it as one of my mantras, hard work pays off. And that’s what I’m doing.”

He and his family, his wife, his daughter and a sister-in-law all work in Mixtitos. He took an old restaurant space, remodeled it, re-imagined it, and turned it into his own. “I have full confidence in his talent,” said Karina Totsuka, whose mother was Mexican and her father was Japanese. “And I know I know how capable she is. So his dream became mine. Because I believe in him.”

Mixtitos Kitchen blends Mexican and Japanese-inspired cuisine with French cooking techniques.

Just as he has combined a Mexican and Japanese and American family, he likes to say, fulfilling his American dream.
